With more recent versions of the code (3.2.3 and later) you can upload in either binary or ascii, it doesn't matter.
Don't understand what I just said? Yeah, it's geek speak for "Just upload the files in any old ftp program and you'll be fine."
I use FileZilla or the Firefox plugin called FireFTP. Primarily Filezilla.
But you can use the ftp built into Dreamweaver or almost any other program.
*Free advice - if you don't have a dedicated FTP client (standalone software like FileZilla that does nothing but FTP) then you really should get one. It's handy.
